Club Soda Is The Unforeseen Key To The Fluffiest Scrambled Eggs

Everyone has a preferred way of making scrambled eggs, but there’s one ingredient that most people don't consider when it comes to achieving a perfectly fluffy texture: club soda.
Club soda may be all your scrambled eggs need to reach that optimal level of softness. Simply add 1/2 tablespoon of club soda per egg to achieve a lighter and softer consistency.
Crack two eggs into a bowl, add 1 tablespoon of club soda, whisk them, and cook them as you normally would. The result should be perfectly fluffy with a touch of extra buoyancy.
Water mixed with pressurized carbon dioxide forms bright, springy bubbles, and thus club soda. The heat from the pan causes the confined bubbles to expand and fluff the eggs.
If you want to try adding club soda to your scrambled eggs, opt for a flavorless variety rather than flavored sparkling water, and use it sparingly according to your preference.
Use less carbonated water to prevent an overly creamy consistency, or skip it altogether. Some find the resulting texture to be too soft and almost wet as opposed to extra fluffy.
