Canned Cherries Are The Simple First Step To A Luxurious Duck Glaze

Duck meat has a rich taste and juicy texture, and its flavor is honed with a fruity glaze. Canard or Caneton aux Cérises is a luxurious French duck dish that incorporates cherries.
It would be a mistake not to pair duck with a cherry glaze. Instead of flying to France or waiting for cherry season, use canned cherries to create this glaze.
Begin by draining a 15-ounce can of cherries through a sieve and reserving the syrup. A half can of cherries is enough to create enough sauce for two duck breasts.
Store the other half for another time, then cut the cherries in half with a knife and reintroduce them to half of the reserved syrup.
Thinly slice a shallot and sauté it in a small pan with oil. Once it's tender, add the cherries and syrup to the pan and allow the mixture to heat up.
While this mixture heats up, make a cornflour slurry in a separate bowl by mixing 1 tablespoon of cornflour with 1 tablespoon of cold water.
Incorporate this into the cherry mixture and continue stirring until the sauce reaches the desired thickness. At this point, the sauce is ready to be glazed on your duck.
