Bulk Up Pancakes With Oatmeal For A More Filling Breakfast
By Greta Pano
Pancakes can leave you feeling hungry and cause blood sugar spikes and crashes due to their high sugar and refined flour content. Combat these effects by making oatmeal pancakes.
Adding oatmeal to the batter increases the fiber content, keeping you full longer. Oatmeal pancakes can be made with a mix of oats and flour or using oats alone.
Use either rolled or steel-cut coats with or without flour; steel-cut oats are less processed and take longer to cook. They have a chewier, crunchier texture and a nuttier flavor.
Rolled oats have a softer texture than steel-cut and require less cooking time. When making oatmeal pancakes with rolled oats, soak them in milk for several minutes to soften them.
If using steel-cut oats, cook them on the stove before adding them to the batter. Regardless of the oats used, they help lower cholesterol and regulate blood sugar.
