Andrew Zimmern's Bacon-Laden Meatloaf Is Inspired By His Grandmother's Recipe

Pulled together with basic kitchen staples like ground meat, eggs, milk, and something starchy, meatloaf is a dish that many people love and can easily prepare. TV personality Andrew Zimmern crafts his bacon-filled meatloaf like his grandma did, describing it as a "hearty meatloaf of beef, pork, and veal studded with flavorful vegetables."
To make his grandmother's meatloaf recipe more special, Zimmern adds a slice of bacon beneath the loaf to infuse it with a sweet, smoky, salty aroma, while bacon laid atop the meatloaf helps it stay moist during cooking. As meatloaf is baked in the oven, enrobing it with fatty bacon can stop it from drying out.
While lean meats like low-fat ground beef and ground poultry aren't traditional choices for meatloaf, they might be the only option and require a little extra fat or oil to succeed. Zimmern's meatloaf also stands out because it calls for heavy cream instead of milk and breadcrumbs in place of the ever-popular bread, along with onions, celery, tomatoes, spinach, and a pinch of nutmeg.
