All You Need Is Ice Water For The Fluffiest Mashed Potatoes Ever
By Riya Anne Polcastro
For the fluffiest mashed potatoes, soak the spuds in ice water. A good ice-cold soak will help eliminate surplus starch so the potatoes can whip up into the perfect creamy texture.
Peel and slice them the same way you would before boiling, then add them to a big bowl of ice water to draw out the starch. For the best results, soak them for an hour.
By the end, you'll see the starch at the bottom of the bowl. Carefully take out the potatoes and rinse them again before preparing your mashed potatoes as usual.
If you don't have 30 minutes to an hour to spare, just soak them in a bowl of ice water overnight, but no longer than 24 hours.
