An ice cream scoop is ideal for getting perfectly even-sized crab cakes with the right density to keep the insides moist and the outsides crisp.
You need to correctly measure your mix to avoid ending up with some big and small cakes, which won't cook in the same amount of time.
The best choice for crab cake-making is a scoop that is shaped like a half sphere with a spring-loaded lever. These scoops have a flat side to level the cakes off.
Simply release the mix on its flat side and give a gentle squish with two fingers to flatten it out. Once you get the hang of it, you can crank out a tray in just a few minutes.
Common size scoops for crab cakes are #20, #24, or #30, measuring between 1 ¾ inches and 2 inches in diameter, and allow you to finish a tray in a couple of minutes.
