Instead of just using olive oil to cook your eggs, the real trick to leveling them up is to drizzle oil on top of them for a distinctive, peppery flavor and glossy texture.
For the best results, you'll want to use extra virgin olive oil that comes in a dark bottle or a variety made in any country producing high-quality olive oil, like Italy.
Once your eggs are cooked, gently pour olive oil over them and sprinkle them with salt and pepper. To further enhance the dish, add parmesan cheese, capers, rosemary, or chives.
