A Buttermilk Glaze Is All You Need For A Truly Superb Carrot Cake

Carrot cake is beloved for its nuanced spices and moist, shredded carrot enveloped between fluffy bites of crumb, but many dessert lovers have strong opinions about frosting.
Instead of adding cream cheese frosting to your carrot cake, opt for a rich buttermilk glaze that encases the cake after cooling to prevent the interior from drying out.
Buttermilk glaze is added to the carrot cake directly out of the oven and seeps into the cake's layers, making the final result extra moist and irresistible.
To make the glaze, combine sugar, butter, buttermilk, light corn syrup, and baking soda in a saucepan. Simmer the mixture until lightly browned for 4 to 5 minutes.
Remove it from the heat and add a small amount of vanilla. Once you remove your cake from the oven, poke a few holes in it and drizzle the glaze on the top of the warm cake.
The rich, buttery sauce will melt within those luscious layers, leaving you with a delectably soft, sweet, and complex flavor.
