Inspiration

"I try to find inspiration at the farmer's market or dining out around the city," chef Serena Chow adds, "I try to experiment with my desserts for family meal at Pearl & Ash, and, if they're a crowd favorite, find a way to transform it into a plated dessert that our guests can enjoy as well."

Ingredients

Selecting ingredients for pastry can sometimes be very dependent on the seasons. But year-round chef Chow says, "I've also developed an appreciation for honey and for raw sugars."

Mastery

Chef Chow has spent hours and hours honing her skills but she says the first dessert she mastered was "the fig dessert for Pearl & Ash. It had fresh figs, anise hyssop, pickled figs in balsamic vinegar, honey brittle and a yogurt sorbet."

Choosing a Favorite

When discussing her favorites, chef Chow says, "I love experimenting with making different ice creams and sorbets."
