Preheat the oven to 250 degrees F.
Roast the flax seeds in the oven for 15 minutes.
Then roast quinoa seeds for 5 minutes in the oven.
Place the quinoa in boiling water, cook for 15 min.
When the quinoa is cooked, add the flax seeds. Cover and let cool down.
Mix all bread ingredients in a mixing bowl. Start with slow speed for 4 minutes, then high speed for 7 minutes.
Add quinoa mix and continue mixing for 1 more minute.
Let the dough rest for an hour in the mixing bowl.
Remove the dough from the mixing bowl and shape the dough round.
Cover dough and let rise for an additional hour.
Shape the dough in desired form (oval, round…), place it on a sheet pan, and place it in the fridge overnight.
Take the dough out of the fridge.
Pre-heat your oven at 480 degrees F.
If desired, use blade to draw leave pattern on the bread.
Bake for 25 min at 480 degrees F.
Turn the oven off and let the bread stand inside for an additional 20 minutes.
Take the bread out of the oven and enjoy!
