Vegetable and Cheese Frittata
Total time: 30 minutes
Ingredients
  • 12 eggs
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup grated or crumbled cheese (feta, parmesan and fontina work especially well)
  • 3 cup cooked vegetables of your choice
  • 2 cup bacon, ham, or crumbled sausage (optional)
Directions
  1. Preheat oven to 400 degrees F.
  2. In a mixing bowl, whisk together the eggs, salt, cream, vegetables, meat (if using) and half of the cheese.
  3. Heat oil in a 12-inch cast iron pan or ovensafe nonstick skillet over medium heat.
  4. Pour in egg mixture, even out all the components with a spatula and top with the remaining cheese.
  5. Let eggs set for one minute and transfer the pan to the oven.
  6. After anywhere from 10 to 15 minutes, the eggs will look cooked through, and the center will still be slightly loose.
  7. If the eggs appear runny when you cut into it, return to the oven.
  8. Let cook in the pan for 5 minutes before serving.
