Pumpkin pie is a signature fall dessert, but it doesn’t have to ruin your diet. This healthier version of a pumpkin pie uses tofu to enhance its creaminess and nutritional profile. It takes only three simple steps to prepare, and the best part is your family and friends won’t know the difference.
Add tofu, sugar, lemon, vanilla, cinnamon and salt. Blend until smooth (at least 3 minutes).
Add remaining ingredients and blend an additional minute.
Pour filling into prepared crust and smooth surface.
Bake pie at 350° for 40-50 minutes, until the top has browned thoroughly. Cool and Serve.
