Ingredients

For the Tofu Pumpkin Pie

  • 1 Package tofu, such as House Foods Premium Firm Tofu (14 ounces), drained and pressed
  • 3/4 Cups sugar
  • 2 1/2 Tablespoons lemon juice
  • 1 Teaspoon cinnamon
  • 1/2 Teaspoon salt
  • 1 Cup pumpkin puree
  • 1 Teaspoon vanilla
  • 1/4 Teaspoon nutmeg
  • 1/4 Teaspoon allspice
  • 1 9-inch graham cracker pie crust

Directions

For the Tofu Pumpkin Pie

Add tofu, sugar, lemon, vanilla, cinnamon and salt. Blend until smooth (at least 3 minutes).

Add remaining ingredients and blend an additional minute.

Pour filling into prepared crust and smooth surface.

Bake pie at 350° for 40-50 minutes, until the top has browned thoroughly. Cool and Serve.
