Superfood Chocolate Cake

A guilt free chocolate dessert

  • 1 1/4 Cup cooked amaranth
  • 1 Cup cane sugar
  • 1/3 Cup cocoa powder
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon sea salt
  • 1 Cup filtered water
  • 1 Teaspoon vanilla extract
  • 1/3 Cup apple sauce
  • 1 Teaspoon apple cider vinegar


Combine all ingredients and mix until smooth and well incorporated.  Place in a cake pan and bake at 350 for 15-20 minutes or until a toothpick inserted into the middle comes out dry.

*Amaranth is an ancient grain that is actually considered a complete protein because it contains all the essential amino acids our body needs. It is also a great source of vitamins and minerals — especially calcium and iron.  It’s also jam-packed with fiber: one cup of uncooked amaranth has 13 grams of dietary fiber.
