  • 3 medium russet potatoes, scrubbed and dried
  • 1 Tablespoon extra-virgin olive oil, 1 turn of the pan
  • 4 NY strip steaks, 3/inch thick, 10 to 12 ounces each
  • 3 Tablespoon butter, divided
  • 1 large shallot, finely chopped
  • 2 Tablespoon all-purpose flour
  • 1 Cup dry red wine
