Salmon and Zucchini Noodle Salad

A salad that can be served as an entree

For the Salad

  • 2 Pouches Salmon, such as Starkist's Lemon Dill Salmon Creations
  • 2 Cups zucchini, "noodles"
  • 2 Cups Brussels sprouts, shredded
  • 1 Red pepper, diced
  • 1 Cup cannellini beans, rinsed and drained

For the Dressing

  • 1/3 Cup extra virgin olive oil
  • 3 Tablespoons white wine vinegar
  • 1/4 Teaspoon minced garlic
  • 1/4 Teaspoon salt, or to taste
  • 1/4 Teaspoon black pepper, or to taste


For the Salad

Mix zucchini “noodles”, Brussel sprouts, red pepper and beans in medium bowl.

Toss the noodle salad with the dressing. (recipe for dressing below)  

Divide salad onto 2 plates and top each with a pouch of salmon.

For the Dressing

In a small bowl whisk oil, vinegar, garlic and salt and pepper.
