Roasted Pumpkin 'Guts'
Hosting a pumpkin-carving party? Don’t toss those "guts" just yet. Drizzle the pumpkin seeds with olive oil and your favorite sweet or savory spices (try cinnamon sugar or cayenne) and bake, and you’ve got a tasty treat.
- Pumpkin guts (gooey orange and seed mixture)
- 1 Tablespoon light olive oil
- Dash of sea salt
- Dash of cayenne
Preheat oven to 350 degrees. Separate the pumpkin seeds from the gooey pumpkin "guts" into a bowl. Toss the seeds with olive oil. Add the spices. Spread the seeds out on a cookie tray and bake for 40 minutes, turning the seeds over frequently to avoid sticking. When the seeds are dried out and toasted, remove from the oven. Let cool and enjoy!
