Ingredients
  • 2 medium blue potatoes
  • 1 medium purple yam
  • 1 tablespoon olive oil
  • 1 small container plain organic whole milk greek yogurt
  • 1/4 cup chives
  • 1/4 cup parmesan cheese
  • dash of salt and pepper
Directions
  1. Preheat oven to 400 F degrees. Thinly slice potatoes and the yam. Using a mandolin works best. Coat the bottom of a 9- inch oven proof dish with olive oil. Add a layer of potato slices and cover with about a1/3 of the yogurt and then sprinkle with chives Parmesan. Add a layer of yams. Repeat. Cover with foil, place in oven and bake for 30 minutes. Let cool for 10 minutes. Then slice wedges and serve.
