Purple Pie with Yogurt and Chives

This pie is a nice upgrade from your typical spud with sour cream, while also giving you more nutrients

This dish is especially rich in vitamin A, fiber, and phytonutrients, which are compounds in plants that fight disease, and promote overall health. If you thought there was something special about purple, you were right. The pigments that make plants purple are called Anthocyanins, which research indicates can improve brain health.

Ingredients

  • 2 medium blue potatoes
  • 1 medium purple yam
  • 1 Tablespoon olive oil
  • 1 small container plain organic whole milk Greek yogurt
  • 1/4 Cup chives
  • 1/4 Cup Parmesan cheese
  • Dash of salt and pepper

Directions

Preheat oven to 400 F degrees. Thinly slice potatoes and the yam. Using a mandolin works best. Coat the bottom of a 9- inch oven proof dish with olive oil. Add a layer of potato slices and cover with about a1/3 of the yogurt and then sprinkle with chives Parmesan. Add a layer of yams. Repeat. Cover with foil, place in oven and bake for 30 minutes. Let cool for 10 minutes. Then slice wedges and serve.
