Gazpacho is a Spanish classic, best made when juicy tomatoes are in season.

This classic cocktail, served at the Polo Club Lounge in New Orleans, was thought to have been developed in New Orleans by the native New Orleanian, Antoine Peychaud. The locally-made Peychaud’s Bitters are named after him.

Combine whiskey, simple syrup, and bitters in a mixing glass with ice. Stir until mixture is homogenous. Coat the inside of a rocks glass with Herbsaint (discard any extra). Strain contents of mixing glass into glass and allow 3 ice cubes to fall into drink. To garnish, rub a lemon twist on the rim of the glass then drop it into the drink.
