- 4 large sweet potatoes
- One 15 ¼-ounce can crushed pineapple, drained
Preheat the oven to 400 degrees.
Place the sweet potatoes directly on the middle rack of the oven. Bake for about 40 minutes (check for doneness by either gently squeezing potatoes or pricking them with a fork to see if they’re really soft). Remove from the oven and let cool for 10 minutes.
Slice the potatoes in half lengthwise and let cool for 5 more minutes. Scrape the potato flesh from the skin into a large bowl. Add the drained pineapple chunks and mash with a potato masher or spoon until pineapple has broken down slightly, about 2-3 minutes.
