Ingredients
  • 6 cup cubed sweet potatoes, (about 3 large sweet potatoes)
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
Directions
  1. Preheat oven to 400°F.
  2. Toss 6 cups cubed sweet potatoes with 1/4 cup oil in large bowl.
  3. Sprinkle with 1 teaspoon salt, 1/2 teaspoon garlic powder, 1/4 teaspoon paprika and 1/4 teaspoon pepper.
  4. Toss again to coat well.
  5. Spread in single layer on foil-lined 15x10x1-inch baking pan sprayed with no-stick cooking spray.
  6. Roast 35 minutes or until tender, stirring halfway through cooking.
