Marinated Tomato Basil Salad
Total time: 5 minutes
Ingredients
  • 3 cup grape and cherry tomatoes, sliced
  • 3 tablespoon avocado oil (or olive oil)
  • 1 tablespoon coconut vinegar balsamic style (or regular balsamic vinegar)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 3 tablespoon chopped basil
Directions
  1. Whisk together the oil, vinegar, oregano and salt.
  2. Put tomatoes in a medium-sized bowl and pour dressing over top.
  3. Add basil and toss gently.
  4. Cover with lid or plastic wrap and refrigerate for at least two hours or overnight.
  5. Toss gently.
  6. Add more salt if necessary and serve.
