Kale and apple salad
Total time: 10 minutes
Ingredients
  • 1/4 cup olive oil
  • 2 tablespoon fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 1 1/2 tablespoon pure maple syrup
  • 1 1/2 teaspoon dijon mustard
  • salt and pepper to taste
  • 3 cup baby kale
  • 1 large honeycrisp apple
  • 1/2 cup pomegranate arils
  • 1/2 cup pistachios
Directions
  1. Put all salad dressing ingredients into a jar and shake.
  2. Add all salad ingredients to a medium sized bowl.
  3. Dress salad right before serving.
  4. This salad stays well in the fridge for several days without getting soggy and the apples don't brown because of the acid in the oranges.
