Jalapeno Cheese Grits
Total time: 45 minutes
Ingredients
  • 3 1/2 cup chicken stock, preferably kitchen basics all natural original chicken stock
  • 2 cup quick-cooking grits
  • 1/4 cup butter
  • 1 cup chopped onion
  • 2 cup shredded monterey jack cheese
  • 4 eggs, lightly beaten
  • 1/2 cup water
  • 1 tablespoon finely chopped jalapeño pepper
  • 1/4 teaspoon mccormick gourmet organic cayenne red pepper
  • 1/4 teaspoon mccormick gourmet organic coarse grind black pepper
Directions
  1. Preheat oven to 350°F.
  2. Bring chicken stock to boil in large saucepan.
  3. Stir in grits.
  4. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  5. Meanwhile, melt butter in large skillet on medium heat.
  6. Add onion; cook and stir 5 minutes or until tender.
  7. Remove from heat.
  8. Add grits, cheese, eggs, water, jalapeño pepper, red pepper and black pepper; mix well.
  9. Spoon into lightly greased 13x9-inch baking dish.
  10. Bake 30 minutes or until set.
