Ingredients
  • 1 tablespoon butter
  • 2 tablespoon peanut oil
  • 1 large yellow onion, finely diced
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground chipotle chilies
  • 4 cup frozen black-eyed peas
  • 4 cup water
  • 1 teaspoon salt or to taste
  • 1 cup long-grain white rice, cooked to package directions
  • pinch ground allspice
Directions
  1. Melt butter with oil in a large, heavy saucepan over medium heat.
  2. Add onion, bay leaves, thyme, chili and allspice.
  3. Cook, stirring frequently until onion is lightly browned, about 7 minutes.
  4. Add peas and 4 cups water; heat to boil.
  5. Lower heat; simmer, covered, until peas are soft, 20 minutes.
  6. Check pan occasionally to make sure they are covered with water; add more if needed.
  7. Season with salt.
  8. Serve over rice.
