Try this delicious side dish: roasted buttercup squash.


  • 4 small buttercup squash
  • 2 Tablespoons butter
  • 4 Tablespoons honey
  • Salt, to taste
  • Pepper, to taste
  • 1 Teaspoon thyme


Preheat the oven to 400 degrees F.

Cut the squash in half and remove the seeds. Arrange the squash on a baking sheet

Heat the butter in a small saucepan and add in honey, salt, pepper and thyme. Using a pastry brush, brush the squash with the mixture and roast for 40 minutes or until the squash are golden brown and tender.
