Honey Roasted Buttercup Squash
  • 4 small buttercup squash
  • 2 tablespoon butter
  • 4 tablespoon honey
  • salt, to taste
  • pepper, to taste
  • 1 teaspoon thyme
  1. Preheat the oven to 400 degrees F.
  2. Cut the squash in half and remove the seeds. Arrange the squash on a baking sheet
  3. Heat the butter in a small saucepan and add in honey, salt, pepper and thyme. Using a pastry brush, brush the squash with the mixture and roast for 40 minutes or until the squash are golden brown and tender.
