Low-proof cocktails made with Cynar, root beer, and vanilla ice cream will have you smiling all summer long.

Fill a highball glass with ice. Pour the Cynar into the glass. Top the glass up with soda until it is about 1 ½ inches from the top of the glass. Add a scoop of vanilla gelato, then pour in a bit more soda to activate the float. Serve immediately.
