Buffalo Chicken And Waffle Bites

Ingredients
  • 1 1/2 cup krusteaz belgian waffle mix
  • 3/4 cup water
  • 1 large egg
  • 3 tablespoon vegetable oil
  • 24 frozen crispy popcorn chicken bites, cooked to package directions
  • buffalo wing sauce
  • ranch dressing
  • blue cheese crumbles
  • 1 green onion, chopped
Directions
  1. Heat and lightly grease waffle iron.
  2. Stir waffle mix, water, egg and oil together with a wire whisk until smooth. Let batter stand 2 minutes.
  3. Pour about 1 tablespoon of batter onto the corner of each quadrant of the waffle iron, to create mini waffle bites.
  4. Cook waffles 2-3 minutes until golden brown (or follow waffle iron manufacturer’s cooking instructions).
  5. Place waffles on a plate. In a bowl, toss the chicken in buffalo wing sauce, until fully coated.
  6. Place one chicken bite on top of each mini waffle and top with a drizzle of ranch dressing, blue cheese crumbles and sliced green onion.
  7. Use a toothpick to secure, if desired.
