Brisket Sliders
  • 1/4 of whole brisket or four pounds certified angus choice beef
  • 2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup cajun rub
  • 12 brioche rolls
  • katchkie farm bob-a-que sauce (to taste)
  1. Pre-heat oven to 325 degrees.
  2. Clean brisket leaving a quarter-inch thick fat cap on.
  3. 24 hours prior to cooking, rub spices and half a cup of Cajun rub onto the beef.
  4. Cover and cook at 325 degrees for 4 hours.
  5. Slice against the grain of beef an eighth inch thick.
  6. Lay the 8 ounces sliced brisket on a buttered, toasted brioche roll and squeeze on Katchkie Farm Bob-A-Que Sauce.
