Ingredients
- 1/4 of whole brisket or four pounds certified angus choice beef
- 2 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup cajun rub
- 12 brioche rolls
- katchkie farm bob-a-que sauce (to taste)
Directions
- Pre-heat oven to 325 degrees.
- Clean brisket leaving a quarter-inch thick fat cap on.
- 24 hours prior to cooking, rub spices and half a cup of Cajun rub onto the beef.
- Cover and cook at 325 degrees for 4 hours.
- Slice against the grain of beef an eighth inch thick.
- Lay the 8 ounces sliced brisket on a buttered, toasted brioche roll and squeeze on Katchkie Farm Bob-A-Que Sauce.
