Ingredients
  • 1 stick unsalted butter, room temperature
  • 1 cup sugar
  • 2 whole eggs
  • 1 teaspoon vanilla
  • 1/2 cup cocoa powder
  • 2 cup superfine almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup powdered sugar
Directions
  1. Preheat the oven to 350 degrees.
  2. Using a stand mixer, combine the butter and sugar until well mixed.
  3. Add eggs, one at a time and mix well after each addition.
  4. Add vanilla.
  5. Next add in the almond flour, coconut flour, cocoa powder, baking soda and salt.
  6. Stir until mixed.
  7. Roll them into 1 inch balls and roll in powdered sugar.
  8. Place on a parchment-lined baking sheet.
  9. Use a glass with a flat bottom to gently flatten them out.
  10. Cook for 8-10 minutes.
  11. Do not overcook.
  12. They will continue to cook when removed from the oven.
