Rasberry Goat Cheese Hand Pies

Ingredients
  • 1 package refrigerated pie crusts (2 crusts)
  • 1/2 cup red rasberry preserves, such as by archer farms
  • 2 ounce fresh goat cheese
  • 2-3 tablespoon chopped walnuts
  • 1 egg
  • sugar, for topping
Directions
  1. Heat oven to 425 degrees. Unroll both pie crusts and roll to flatten. Use biscuit cutter or rim of bowl to cut into fourteen 4-inch circles. Arrange circles on a baking sheet. Place 1 tablespoon preserves in center of each. Top each with about 1/4 oz. of goat cheese and 1 tsp of nuts.
  2. Place a small cup of water near work surface. Dip tip of finger in water, and use to moisten rim of 1 crust. Carefully top with another circle. Press edges to seal, and flute to form decorate edge. Repeat to form 7 pies.
  3. Beat egg in a small bowl, and brush generously on each pie. Sprinkle with sugar if desired. Bake 10 minutes until golden brown.
