I have 1/2 cup of pumpkin left over after making my protein pumpkin spice pudding and decided to make dessert with tonight dinner! Ingredients
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 3 tablespoon raw organic honey
  • 1/2 teaspoon vanilla extract
  • 3 tablespoon coconut flour
  • 2 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon bakin soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 cup chocolate chips

  2. In a medium mixing bowl combine pumpkin puree, eggs, coconut oil, honey and vanilla. In a medium bowl combine coconut flour, cocoa powder, baking powder, baking soda, cinnamon and sea salt. Fold dry mixture into wet and combine. Then fold in chocolate chips. Bake for 30 minutes or until a toothpick comes out clean.
