Paleo Pumpkin Chocolate Chip Brownies

I have 1/2 cup of pumpkin left over after making my protein pumpkin spice pudding and decided to make dessert with tonight dinner! I am feeling like brownies… Are you looking for a new paleo recipe then try my Paleo Pumpkin Chocolate Chip Brownies!

I even made them as cupcakes!  Awesome!!

Notes

Note: I made 12 cupcakes and it took 20 minutes at 325 degrees F. Then I sprinkled with grated unsweetened coconut.

Ingredients

  • 1/2 Cup pumpkin puree
  • 3 large eggs
  • 1/4 Cup coconut oil, melted
  • 3 Tablespoons raw organic honey
  • 1/2 Teaspoon vanilla extract
  • 3 Tablespoons coconut flour
  • 2 Tablespoons unsweetened cocoa powder
  • 1/2 Teaspoon baking powder
  • 1/4 Teaspoon bakin soda
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon sea salt
  • 1/2 Cup chocolate chips

Directions

In a medium mixing bowl combine pumpkin puree, eggs, coconut oil, honey and vanilla. In a medium bowl combine coconut flour, cocoa powder, baking powder, baking soda, cinnamon and sea salt. Fold dry mixture into wet and combine. Then fold in chocolate chips. Bake for 30 minutes or until a toothpick comes out clean.
