Geoffrey Zakarian Loves White Truffle For Fall, And Other Things We Learned From Our Twitter Chat
Geoffrey Zakarian — chef; restaurateur at The Palm Court, The Lambs Club, The National Bar & Dining Rooms, and The National Greenwich; and Food Network star of Chopped, The Kitchen, and Top 5 Restaurants — took to Twitter and answered a few questions with us on October 19. We asked him a range of questions from his favorite fall dishes to home cooking tips. Here are some of the highlights.
Zakarian revealed that his favorite fall recipe is a fettuccine with sage and white truffles, and his favorite truffle dish is anything with pasta. Soups are a cold weather staple, and the Iron Chef's go-to favorite is any type of squash soup with a blend of spices. He recommends a curried squash soup.
Zakarian said that an overlooked fall ingredient is chestnut. He also delved into the great pumpkin spice debate, noting that the craze has gone too far and that he prefers apple pie to pumpkin pie, anyway.
He also told us that he cooks his family a full breakfast every day. "It's my favorite because I can guarantee we'll all be together!" Zakarian said.

He also shared some tips in the kitchen. For example, he said that the best way to keep knives sharp is to use a magnetic strip to store them because wooden holders make them duller. Also, Zakarian's favorite snack to eat while binge watching Food Network shows is either spiced nuts or popcorn made with olive oil.
Finally, Zakarian gave some words of wisdom to any aspiring chefs, saying they should work to gain experience, not for money.
