Vegan chef and restaurateur Matthew Kenney is on a roll with the opening of a new restaurant in his home state of Maine. Arata opens in Belfast on May 27, joining his three other vegan restaurants. The Asian-inspired menu at Arata will feature fresh locally-grown ingredients in dishes such as Smoked King Oyster Buns and Kimchi Pancakes with Bibb Lettuce, Sesame, Chili Sauce, and Pickled Vegetables.

Kenney’s website describes the concept for Arata, stating, “[W]e will use this location as an incubator, to test unique concepts, experiment with innovative techniques and introduce new ideas in plant food.”
