Eating a healthy and satisfying dinner is important because it's the last meal you eat before you go to bed. You want to make sure that what you're eating is filling, but not too filling so that your digestive processes keep you up through the night. The best thing you can do is combine lean protein with vegetables and avoid high-starch foods so that your body is not working to digest food while you sleep. Lean protein can be anything from salmon and ground turkey to tofu and black beans. When it comes to  vegetables, go crazy with color!

For a light recipe, we chose roasted chicken and root vegetables. In the fall, the produce is spectacular, so take full advantage of it while it's still in season. By eating lean protein and unlimited vegetables for your last meal of the day, you will surely feel satisfied, but not too full before bed. This way, you will wake up feeling refreshed and ready to take on the day.
