Superfood Christmas Bark – satisfies those sweet, seasonal cravings + a cinch to make. Nutrient rich ingredients benefit health and well-being. Dairy-free dark chocolate, goji berries and pistachios are not only high in antioxidants, but they are also a canvas of Christmas colors + full of festive flavors. Armed with an alternative to seasonal sugar, go on and double *wait* triple the recipe. And, it’s a perfect lil’ gourmet gift, too. SUPERFOOD CHRISTMAS BARK
{makes one 9×12 sheet}

1 lb. dark chocolate chips, dairy-free chips {such as Enjoy Life}, or non-dairy white chocolate chips {such as Kind David}
2 tsp. coconut oil + extra for greasing
1/2 cup dried goji berries or unsweetened cranberries
1/4 cup toasted large flake unsweetened coconut

1. Coat a 9×12 rimmed baking sheet or a 6 small loaf pans {2×5} with coconut oil cooking spray {or manually with paper towel and coconut oil} then line with parchment paper, leaving an overhang on long sides.

2. In a saucepan, melt chocolate with 2 tsp. coconut oil over low heat until it is completely melted, mixing frequently {or you can do this in the microwave in 30 second increments}.

3. Pour melted chocolate into baking sheet or divide among pans and spread in an even layer with the back of a spoon. Sprinkle toppings over chocolate and very gently press toppings into chocolate {so they don’t pop off}. Refrigerate until firm, at least 1 hour – you can also place in freezer. Remove and break or slice into small pieces and share!
