It's All About the Poach

There's a Florentine, which calls for spinach, and then there's the Nova, which calls for lox... the list goes on and on. So it's best to decide how many options you're giving your guests before you get carried away. It’s All About the Bread

Sure, the English muffin is the go-to, but it doesn't end there. Brioche, waffles, croissants, and savory scones all work as well and bring their own spin to the dish. Have a toaster oven plugged in if guests want a warm, crisp piece of bread. 

Meat

Ham, bacon, chorizo, or prosciutto. Choose your preferred meat and pile it on. 

Greens

Spinach, asparagus, chard. Sauté the greens beforehand with garlic and oil for guests and serve them warm. 

Gourmet Add-Ons

Smoked salmon, avocado, lobster, crabcakes, goat cheese. All of these make great items between the bread, but the poached lobster or crabcakes could make for a perfect substitute for bread as well.
