2 tablespoons olive oil
1 cup minced yellow onion
3 or 4 medium beets peeled, trimmed, diced (about 4 cups)
½ cup chopped carrots
4 cups chicken or vegetable broth
1 cup water
1 tablespoon fresh lemon juice
1 teaspoon salt
1 teaspoon freshly ground black pepper
sour cream for serving (optional)

Serve warm, garnishing each bowl with a spoonful of sour cream, if you wish.

Chicken-Fried Steak

Four 6-ounce pieces cubed steak 

Salt, Freshly ground cayenne pepper

1 ½ cups all purpose flour

2 large eggs

1 cup buttermilk

2 cups vegetable oil

Cream Gravy

5 tablespoons unsalted butter

¼ cup all-purpose flour

2½ whole milk

salt, coarsley ground black pepper, cayenne pepper

Serve the chicken-fried steaks smothered with the gravy.

Crawfish Dip

One 8-ounce package cream cheese, at room temperature
salt
Cayenne pepper
Tabasco sauce
Party crackers or toast points for serving

1½ ounces Grenadine
1 tablespoon fresh lemon juice
