Making risotto is so easy you don't even need a recipe. And, it's easy to make without using any animal products. Just dice a yellow onion and mince a few cloves of garlic. Sauté them in olive oil and then add a scoop of short-grain Arborio rice. Add a small amount of vegetable stock and cook until the liquid is almost absorbed. Continue adding small amounts of liquid until the rice is creamy and fully cooked (adding salt and pepper as you go).
