10 Breakfast Recipes to Make for Dinner

I shared this week's SWAT theme, Breakfast for Dinner, with the Culinary Content Network of food bloggers to see if they shared my love of breakfast, and I was not disappointed. This was another crazy week of submissions (more than 60!), and I've been gifted with some really exceptional recipes to drool over.

In fact, I decided to create another SWAT solely dedicated to breakfast sandwiches because I couldn't give them enough attention here — stay tuned, it's coming.

For this week, however, I reviewed the submissions and chose my 10 favorites — yes, sadly only 10 — and instead of going with classics like buttermilk pancakes (which are awesome at any time of day), I chose recipes that had a more of a dinnertime vibe.

Breakfast Salad With Eggs & Potatoes

Oat & Sesame begins her recipe post with this statement: "Yep, it's a thing. Breakfast Salad."  Even if you think "breakfast" and "salad" should never be used in the same sentence, you should still check out the recipe here.

Breakfast Pasta

This breakfast pasta is modeled after pasta carbonara — an Italian dish where eggs and cheese make a thick and decant sauce — yet The View From Great Island ups the ante with a greater focus on the meat. She leaves us with this note: "And don't be afraid to pair it with a cup of strong coffee.  Yes, coffee.  Don't knock it till you've tried it." But maybe try decaf for dinner.

Breakfast Pizza

If you've never had pizza with eggs baked on top, you are sorely missing out. You should fix that ASAP — maybe with this recipe from Feed Your Soul Too. As he puts it, "the coup de grace for this pizza is the addition of the eggs... When you top the breakfast pizza with the eggs, you think they will not cook enough. But they do cook. Then when you serve it and you cut the yolk, the creaminess just melts." Check it out here.

Cocoa & Chile Mole Flank Steak With Cumin Quinoa and Fresh Salsa

Steak and eggs is a breakfast classic and so fitting for dinnertime, too. In this recipe, a rough, fresh salsa of tomatoes, cucumbers, cilantro, onions, and black beans is served over soft scrambled eggs and a cocoa- and chile-spiced flank steak.

Hatch Green Chile and Bacon Quiche

The season for hatch peppers is from August to September, and in that short span of time, people just go nuts for them. Highlands Ranch Foodie says that in her recipe, "the Hatch chili flavor [is] the star, even beating out the bacon...if you can imagine that."

Tasty Ever After brings her own personal twist to Nashville's famous hot chicken. In this recipe, crispy fried boneless chicken breast is served on top of a spicy jalapeño, bacon, and sharp Cheddar waffle and paired with a fiery maple syrup sauce.
