Purple Potatoes with Rosemary and Caramelized Onions
This dish is normally made with red or fingerling potatoes, but I had purple potatoes delivered in my CSA box. Aren't they pretty? But mashed just seemed wrong. Really, tell me — how often are potatoes so gorgeous? Full disclosure? I do love purple; it's my favorite color!

Black Truffle Mashed Potatoes
I have tried truffles! Well, to be more precise, black truffle oil and truffle salt (which is rumored to not actually have proper truffles... but I digress). I will admit that making these mashed potatoes was my first time ever smelling, tasting, and cooking with truffle oil and salt. What an experience! The truffle is actually the fruiting body of an underground mushroom and can be found within the leaf litter and the soil around certain types of trees. They are highly acclaimed in the culinary world and often referred to as “the diamond of the kitchen.”As one of the most expensive edible delights, the costs will knock your socks off... ranging all the way up to $600 per pound! Ouch! (Hence the truffle oil and salt in my house.) If you’re wondering, yes, I will be cooking with truffle oil and salt again... and perhaps shaved truffles one day!

Vegetable Bean
Admittedly, it’s not the prettiest vegetable dish. But, I swear to you, it tastes and smells a lot better than it looks. I guess the dried red kidney bean was sort of an unfortunate choice (color-wise), so feel free to substitute another kind of dried bean for this soup if purplish-brown doesn’t do it for you.
