Arthur's escarole and white bean soup.
Some people put carrots in their escarole soup. Some put celery. Some rice. They're probably all fine and good recipes. I wouldn't know, I've been trying to replicate Mom's for about 10 years and hers doesn't have any of that fancy stuff — doesn't need it. Its main components are escarole, onion, garlic, chicken stock, and cannellini beans. That makes it a very easy soup to make. It's kind of the ideal soup because it's heartwarming but thin — so it works year-round. It will fill you up, but you don't feel heavy after eating it — just satisfied. The beans kind of leak out their starchiness, thickening it a little once the soup has had a chance to sit. A tablespoon of red pepper flakes while it's cooking gives it a little edge, and sprinkle of Parmesan to finish once you've ladled it out is the perfect finish. It's almost always better the second day. Click here for Recipe SWAT Team: Healthy Greens.

White Asparagus Salad
This is a simple salad that celebrates spring produce. The key is to use incredibly fresh ingredients, particularly the white asparagus. White asparagus has a sweeter, less bitter flavor than green asparagus, and this minimalist recipe will really make it stand out in the dish. Asparagus can dry out if it’s left out in a supermarket or fridge, so try to find a local variety, preferably from a farmers market.

We came up with this recipe to be a cooling complement to lots of outdoor activity in the middle of summer. White tea leaves are known for their delicate flavor and low caffeine content. They also retain the highest antioxidant level of all tea varieties. Everyone knows antioxidants are good for us, but few people know their special use as a powerful skin protector. The polyphenols in the tea, the anthocyanins in the blueberries, and the astaxanthin in the spirulina make for a holy trinity of super antioxidant protection so you can play in the sun without stressing the burn.

"My boys use to spend their summers with their grandmother in Alabama. She would treat them to a meal at a restaurant that served white barbecue sauce over chicken and my family thought it was wonderful. I started making it at home and every time I make the sauce, it brings back memories of those summers in Tuscaloosa. The white sauce should be applied only at the very end of your grilling or smoking because it will breakdown and separate if it is heated too long." — Sabrina Everett, Thomasville, Ga.
