Bibb Salad
The brightness of the lemon-mint dressing nicely balances out the slighty spicy bitterness of the watercress in this simple salad. Letting the salad sit for a few minutes before serving softens up the leaves as the lemony-mint dressing is soaked up. Blood oranges or any other type of citrus is a great addition for some added color. Try serving this dish with a simply cooked piece of white fish for a healthy, balanced meal.  Click here for Recipe SWAT Team: Healthy Greens.

What's a crossbone, you ask? It's the double porterhouse version of a lamb — the saddle of the animal that essentially gives you every cut you'd order separately. This recipe makes bacon with the lamb, and serves it with a light watercress salad and flavorful smoked barley.    Want more from David Burke? Check out his weekly column on The Daily Meal.

Fruits and vegetables are kind of a big deal. Whether you’re growing them, buying them, juicing them, or eating them, working them into your daily routine is a must. All natural fruit and vegetable juices retail for double digits and people can’t get enough of them. Though many companies have dabbled into the retail-juicing scene, V8 was one of the originals.

Peppery Vietnamese-Style Noodle Soup
I don't like a whole lot of soup in my noodle soup; it always amazes me whenever I go out for noodle soup with a friend how much liquid the noodles are swimming in, and how everyone else can finish nearly a quart of soup on their own, down to the last drop. So, in concocting this dish, I chose to use less soup and more noodles and greens, but that also means that you have to eat this right away, as the noodles will soak up the soup like a sponge. This recipe makes use of a little help from the store — purchase a whole roasted chicken, pull off one of the breasts, and save the rest for another dish during the week. See all soup recipes. tuna
The combination of tuna salad and egg salad is inspired by a frequent sandwich made by my mother, and this recipe is spruced up with a spicy idea from a previous SWAT ingredient. With the addition of some good bread and an herb salad mix (or watercress, if you can find it), it is a sandwich most might not think of making, but one that makes lunch (or breakfast) so much better.
