Bruschetta with Kale
A simple, light appetizer of toasted garlic bread topped with kale. Use crusty Italian bread, which is strong enough to hold the stewed greens. Recipe courtesy of Chef Alessandro Gargani.

Raw Kale and spinach salad
This superfood salad is packed with nutrients and vitamins (and is absolutely addicting). The quick-pickled red onions add a tangy bite to the dish, while the garlicky dressing breaks down Kale's tough leaves for a crunchy and hearty salad. Tossing some chia seeds on top is just for good measure and health. Feel free to substitute them with toasted sunflower seeds, hemp seeds, or another nut. Click here to see The Best Kale Recipes You've Ever Tried.

Harvest Kale Salad with Honey-Miso Dressing
I love dark winter greens, kale in particular. It's fabulous in hearty vegetarian stews, sautéed, or used in risotto. My favorite preparation, however, is in a salad. Tossed with a good dressing, it never wilts — in fact, I almost like it more the next day. This recipe was inspired by the number of colorful vegetables you can find in the dead of winter (yes, color does exist in a deep freeze). Rich butternut squash, possibly roasted with garlic and rosemary, tart dried cranberries, and buttery toasted nuts. You could also add caramelized onions, or roasted purple potatoes to the mix. And of course, a dusting of snowy, white cheese, if you're so inclined. Click here to see The Best Kale Recipes You've Ever Tried.

Kale Bean Stew
Cannellini beans give this stew a creaminess and body that will make you forget all about the carbs. If you can't sit around the house for three hours (and who can, really?), you can try using a slow cooker, or soak the dried beans overnight. The key to making this stew something really special though, is to make your own stock. But, if you must use store-bought, make sure to get the low-sodium variety. You'll be cooking this stew for a long time, which means that any salt already present will concentrate.Click here to see 7 Satisfying Low-Carb Recipes.Click here to see 10 Vegetarian Recipes.

Kale and Pancetta Risotto
If you're just coming around to liking kale, as I am, this is a wonderful recipe to try — the healthy, bitter green is well balanced against the salty pancetta and creamy risotto rice. Click here to see The Best Kale Recipes You've Ever Tried.

Crispy Truffled Kale Chips Recipe
Kale is one of my all-time favorite greens (although, honestly, how many people really keep a list of their favorite greens in mind?) This robust, leafy vegetable is extremely versatile and packed with flavor. Unlike with some hearty greens, such as collards and Swiss chard, kale is delicious both cooked and raw. In this particular recipe lacinato kale is baked up into crispy, delectable chips. Try not to get too addicted.  Click here to see The Best Kale Recipes You've Ever Tried.

Rigatoni with Tuscan Kale, Black Trumpet Mushrooms, and Sausage
OK, I’ll admit, I was inspired to make this because black trumpet mushrooms were on sale. But, you can definitely make this with whatever mushrooms you like or have on hand and it would be just as good. The same thing goes for the pasta — any shape you can poke with a fork will do nicely — I just happen to like rigatoni. The Kale gives this dish a warm rustic feel.  I’m no nonna, but here are the things that I think really matter: Brown the sausage well, be nice to the mushrooms, don't overcook the pasta, and season as you go. Enjoy! Click here to see The Best Kale Recipes You've Ever Tried.
