Potato BIts
This recipe is relatively quick (maybe 35 minutes total, plus some chopping) and all the fun takes place in two pans (one for the broth, one for the risotto).  You have to watch the risotto carefully since you’ll be adding broth over time, but it is fun to  watch the rice grains inflate and eventually reach the perfect level of softness.

"I love to treat holidays as a special occasion. I always like to do a white truffle risotto. It's so special and only around a few brief months. It's worth the splurge because you don't really have to give anyone a gift! It's so luxurious on its own. For gift ideas, I feel that wine is always appropriate, but usually they are ill chosen. I prefer to give antique out of print cookbooks. They are a treasure and also give a real snapshot of what cuisine was like in another time. They make a great conversation piece and if opened in the kitchen, it's always good for an extended conversation about the culture of the past."

Risotto with Pancetta and Fennel
One the best chef cooking tips I've ever picked up? Add a touch of mascarpone to risotto — it gives the dish that extra bit of smooth, silky richness you didn't even know was missing. This recipe is a true favorite, combining salt from the pancetta with the slight sweetness of the cooked fennel. Click here to see Recipe SWAT Team: One-Pot Meals. Swiss Chard and Shiitake Mushroom Risotto
True, anything with a cup of grated Grana Padano is going to taste good. But, to me, at least, that's a great excuse to indulge in some risotto, and this risotto does indeed have a cup of grated Grana in it. That's not all that's in it, though — delicate shiitake mushrooms and wilted Swiss chard are in the mix as well, and a topping of crisp-tender chopped chard stems lend a little crunch and a ton of visual appeal. After all, you eat with your eyes, too. Click here to see Swiss Chard: Not Just for Sides.

Goat Cheese Risotto
Hello all, I am the risotto queen, nice to meet you. Wait, what? True story — that is my name in my kitchen at home. At work, I'm known as "Queen of the Rabe," due to my incessant talk of the beloved vegetable with our recipe editor, Will Budiaman.  So, to bring together my love for broccoli rabe and risotto, I thought what better way to bond the two then a little butter and a bit of formaggio. The result was better than I had hoped — happy faces and full stomachs!  Click here to see Butter vs. Olive Oil: What's Better?

Risotto with Onion Cream, Smoked White Sauro, and Crispy Seaweed
Take a walk on the exotic side with this risotto with smoked white fish and fried seaweed. Sauro is a white fish similar to swordfish found in Italy; if you can’t find it, smoked swordfish is an acceptable substitute.
