Quinoa with Feta
My avocado and meat-loving boyfriend's response to this dish? "Babe, you killed it." While I wish I could take credit, I think it was really due to the combination of ingredients: salty and creamy feta cheese, refreshing cilantro, and sweet grape tomoatoes. Quinoa, a protein-packed grain, has a nutty quality to it that works with a variety of dishes — maybe none easier than this one. The quinoa was still warm when I added it to the rest of the ingredients, so it caused the cheese to melt a little, which was clutch. Because of the creaminess from the feta, there was no need for any additional fat or oil. A splash of red wine vinegar or lemon doesn't hurt if you feel like you need it, but honestly, I don't think you will.  Click here to see 8 Easy Vegetarian Dishes. Quinoa salad
When packing up a meal for a picnic, tailgate, or even a potluck at a friend's house, nothing beats hearty grain-based salads that can be made in advance — and this quinoa salad is a new favorite. Inspired by a dish a family friend made where she covered the quinoa with a layer of kale and salted pumpkin seeds, I decided to stir the greens into the quinoa so each bite was full of flavors. Mango adds a sweet and tropical bite, and I garnished the dish with roasted almonds for a buttery, salty finish. Click here to see New Twists on Tailgating Recipes.

I'm not one for salads. They're just not indulgent enough for me. In fact, if I have to make one, I sneak a little cream into the dressing just to make a point. But when I wanted to make something quick, I knew that a salad was one of the easiest options. To force myself into salivating for one, I thought hard about what my favorite ingredients are to have in a salad and came up with chicken, corn, heirloom tomatoes, and spinach. With some quinoa and a few additional touches, I am now just a little bit more in favor of salads. I think you will be, too.  Click here to see Fast and Furious Dinner Recipes — 20 Minutes or Less.
