If anyone has ever made risotto then you know that it takes a bit of effort in front of the stove to prepare it... but boy, is it ever time well spent lol! The trick to a perfect creamy risotto is only use aborio rice, and keep adding in the simmering hot broth in small amounts (stirring constantly with a wooden spoon) a small amount at a time until it is fully absorbed before adding in more, you might use less than the amount stated on this recipe.... only continue to keep adding in the broth until the rice is done to a desired texture. This is a wonderful risotto recipe, especially in the cooler weather. Try to purchase Italian pancetta for this recipe, you can purchase it in any deli department or Italian store, it is very easy to find and it is much better than using bacon for this recipe.

This pumpkin risotto also works will with butternut squash. It has a rich, buttery taste, and is a good comfort food. Instead of arborio rice (the traditional choice for risotto), it's made with orzo. This recipe makes A LOT. You'll enjoy leftovers (good cold or hot) for a few days.

Since pumpkin is the "Ingredient of the Month", I thought I would contribute a few pumpkin recipes. If you like risotto, and are looking for something a bit different, you should give this one a try. I think the nutmeg and gorgonzola cheese are an interesting combination with the pumpkin. The risotto can be served as a side dish or main course.

Yummy, creamy satisfying risotto built for fall. Pair with a nice grilled meat and a crisp green salad. Wonderful. Even if it isn't fall anymore! My youngest found this online somewhere and sent it to me. We ALL love it!
