Red Potato Salad with Broccoli
Here's a healthier version of potato salad that's made with red potatoes and broccoli for extra fiber. A tangy vinaigrette packs enough punch to make anyone forget all about the mayonnaise. Make sure to drain the potatoes and broccoli thoroughly so that they don't turn the dressing watery.See all recipes for broccoli.

Potato salad
A classic cook-out side dish. This potato salad is best if made the day before serving so the potatoes have time to absorb the flavors of the dressing and garnishes.

Super Sweet Potato Salad
I use canola oil in this recipe because its mild flavor doesn't overpower the delicate sweetness of the dressing. Plus, it adds a boost of good nutrition and omega-3 fat! Fiber and vitamin-rich sweet potatoes are a tasty, healthy substitute for regular potatoes. Try it. See all potato salad recipes.

Potato Salad
This is a quick, traditional potato salad that is so easy to make! White, red, or Yukon gold potatoes are all good choices for this recipe (Russet potatoes are not a great choice because they may fall apart). I don't peel my potato, but you can if you prefer. Please be sure to read the label to ensure your choice of Italian salad dressing is gluten-free.

Park Deli was the place for the best sandwiches and salads growing up. Their potato salad was a favorite. It's a simple potato salad with just a few ingredients. It's tangy and creamy and so good with a sandwich.

Simple Potato Salad
I hate mayo. Yes, it's true. It might be due to the fact that my sister used to make "turkey" sandwiches growing up that consisted of a thin layer of turkey and heaping mounds of mayonnaise. With just the slightest touch of her hand, mayo would ooze out of the sides only to be licked up by my sister in front of my horrified eyes.  So yes, it's probably psychological and, truth be told, I don't mind it if a little is slathered on a sandwich. But would I ever enjoy a mayonnaise-based potato salad? No way. So instead, I made this simple version to appease my dislike of mayonnaise and left out the hard-cooked eggs to appease my boyfriend's dislike of them. But, with fresh herbs and a lime dressing, this recipe is light, tasty, and still works as a great side dish. If you want to thicken it up a little, feel free to add some diced hard-cooked eggs to the mix.  Click here to see 9 Summer-Ready Potato Salads.

Geraldine's Potato Salad
Since there are as many versions of potato salad in the South as there are shotguns, every church picnic involved at least a dozen. (Potato salads, not shotguns…) But grandmother — the competitive cook she was — always insisted I taste hers first and last because, as she often reminded us, it was the best. This version uses almost all of the basic ingredients and secret spices of her original recipe, but lets nutrient rich and almost-calorie-free cauliflower stand in for half of the potatoes.
