This recipe from Melt: 100 Amazing Adventures in Grilled Cheese (page 98) is the perfect recipe for college kids. It can be made quickly with little mess and in large quantities. This particular recipe would be perfect for parties or large gatherings and pairs nicely with the college beverage of choice: beer.

We have no shame in admitting that this is one of our favorite meals, when done the Athlete Food way.“We've put our stamp on the traditional idea of nachos by using iron-rich bison, adding leafy greens, and using non-GMO, lower sodium chips made from beans. It's Zippy Tip Tuesday!
Last weekend, my S.O. (Significant Other) and I went to the Saugatuck Brewery, in Saugatuck, Michigan. We enjoyed the most amazing hummus with homemade flour tortilla chips, but our ratio of chips to hummus leaned heavily on the chips, so we ended up bringing several of them home.
Since we didn’t have dessert at the restaurant, I decided it would be fun to turn these delectable little leftover chippy triangles into a sweet treat. I started by melting some chocolate and spreading it onto each chip. I then sprinkled the chips with various toppings — chopped nuts, toffee bits, coconut, M & M’s, Reese’s Pieces, dried cranberries, etc.
Yum! The crunchy, salty chip was a great vessel for the sweet toppings; and before we knew it, our leftovers had been polished off rather quickly!
I suppose if you wanted to make your own chips for Chocolate Nacho Pizza, you could do that too. Just take flour tortillas (although I’m sure corn would be good too!), cut them into quarters and fry in oil at 360 degrees for a couple of minutes.
Or, if you REALLY wanted to get fancy, you could make your own homemade tortillas, but that would totally move us out of the realm of “Zippy Tips”. I guess we could save that for another post! Visit my blog at: http://jazzygourmetblog.com
How would you top your Chocolate Nacho Pizza?
When I think snacks, I think nachos. And when I think nachos I think about all the horrible nachos I've eaten over the years. You always get what ends up being a platter of chips with a smattering of toppings centered on top that disappears way too quickly. It's a ploy to get you to eat a bunch of nasty chips. Stuff it. I don't want your stinkin' chips. I want some real nachos!
So what are real nachos? A full distribution of toppings per each nacho. Fully-dressed individual nachos that are layered with each flavor so that you don't miss out on anything. It's nachos as meal really — there's so much stuff on each one that you could probably be satisfied by dinner eating just six of them.
Want to use canned refried beans? Go ahead, just don't skimp on five-minute stuff, man: simple salsa, chips, and guac. Then layer the chips, bean, steak, Cheddar, salsa, guacamole, crema, tomato, onion, spring onion, jalapeño, and cilantro. Heck, you could even argue that these are healthy. Think about it. Nachos that are baked, not fried; raw vegetables... it's almost a diet. Layer it high and proud.

Who can resist chili cheese nachos? Staggeringly high in fat, sodium, and calories, this appetizer is usually a diet killer, but not here.
