California is known for its agriculturaly bounty, and this sandwich reflects that. The California raisin and almond crops are the biggest in the country. Goat cheese got on the national map because of California producer Laura Chenel, and Monterey Jack was invented in California. The chile reflects the vibrant and vital Mexican culture and also adds great flavor. Combined in a grilled cheese sandwich, these ingredients, including the iconic Humboldt Fog cheese, create a memorable sandwich and a true taste of the Golden State.

Baked Cauliflower Dip
This particular dip is a hot, baked cauliflower dip. It is inspired by a classic hot artichoke dip, but slightly healthier and without my nemesis (mayo). The boiled cauliflower has a creamy texture all on its own, but the addition of cream cheese, Monterey jack, and a bit of goat cheese makes for an incredibly flavorful, smooth, and rich dip. Does the fiber count make it healthy?! It’s great with fresh cut veggies or crackers, and blessedly can be made the day beforehand and baked until hot and bubbly right before serving. However, if you have to bake and serve later, don’t worry, it also tastes great at room temperature.

For a hearty Southwestern meal, serve this dish with rice, pork tamales, picadillo, flour tortillas, and a salad of tossed greens and tomatoes. Overnight soaking time not included in preparation time. If you'd like to avoid soaking and cooking dried beans, please feel free to sub canned beans. We love this dip and make it all of the time because it is so simple and tastes great. I can usually have this from refrigerator to table within 10 minutes. You might want to start with less garlic and adjust according to your taste. We love garlic.
